AYAM PAPRIK ALA THAI


Ayam Paprik ala Thai

1 kg isi ayam dihiris nipis ( 1 kg chicken fillet- slice )
4 biji bawang putih dihiris (4 garlic.. slice)
4 biji bawang merah dihiris ( 4 shallots.. slice)
1 inci halia dihiris halus (1" ginger.. slice finely)
1 biji bawang besar dihiris memanjang (1 big onion.. slice)
1 btg lada merah dan 1 btg lada hijau dihiris (1 red chilli and 1 green chilli slice as shown in photo)
6-8 biji lada padi diketuk (6 to 8 bird eye chili)
4 helai daun limau purut (4 kaffir leave)
4 sudu makan lada kisar (4 tbsp chilli paste)
4- 5 smkn chilli sos ( 4 to 5 tbsp chilli sauce)
4-5 smkn tomato sos ( 4 to 5 tbsp tomato sauce)
2 sudu makan sos tiram ( 2 tbsp oyster sauce)
Sedikit kicap manis ( sweet black sauce 1 to 2 tbsp)
1 cube ayam (1 chicken cube)
1 cawan air ( 1 cup of plain water)

 Sayuran ( Vegetable)
Bunga kobis.. potong kecil ( cauliflower.. cut)
4 biji jagung putik ( small corn)
Lobak merah ( carrot)
Kacang Panjang / boncis ( long beans/ french beans)
** Sayuran  terpulang masing ( choice of vege up to you)

Panaskan minyak.. Goreng ayam hingga menjadi keputihan.. angkat, toskan dan ketepikan.
(Heat oil in wok, fry chicken till turns white,  move from the wok, drain and put aside)

Tinggalkan sedikit minyak dlm kuali dan tumis bawang putih, bawang merah dan halia hingga wangi.. (Remove the excess oil from the wok.. left some to  saute shallot, garlic and ginger till nice smell)

Masukkan lada kisar dan tumis hingga pecah minyak (add in chilli paste and saute till the oil separate from the paste)

Masukkan sos cili, sos tomato, sos tiram dan sedikit kicap. Masukkan isi ayam dan gaul rata (add in chilli sauce, tomato sauce, oyster sauce, black sauce, chicken fillet that had been fried earlier.. mix well)

Masukkan air, serai, daun limau purut.. di biarkan mereneh sebentar.. kacau rata masukkan bawang besar dan sayuran dan rasa masukkan sedikit lagi air jika pekat. ( add water, lemon grass, kaffir leaves and let it simmer for a while and add onion and other vege.. add seasoning..(optional) to taste add a little water if the gravy is thick.) Happy eating
